Haut Espoir Cloudfall 2020 (750ml) Monferrato BOTTLING: April the 20th andA total of 5 cultivars were used in this blend. The varietals were fermented separately using different methods of fermentation. The Sauvignon blanc, Semillon, Viognier and Chenin Blanc were all fermented in stainless steel tanks and the Chardonnay underwent wild fermentation in older oak barrels. The Chardonnay underwent MLF, to increase the mouthfeel, the other components were used for their freshness and fruit forward expression of the terroir.
